New Zealand Fast Facts
A hangi (or earth oven) is the best known traditional form of cooking for New Zealand Māori. To 'lay a hangi' or 'put down a hangi' means using this traditional Māori method of cooking food in a pit oven. This is a long process which starts with the digging of a pit, heating stones in the pit with a large fire, placing wire baskets of covered food (such as meat, poultry, vegetables and steamed puddings) on top of the stones and covering everything with earth. After several hours, the hangi is all uncovered and lifted. Hangis are made on special occasions.
