The formal lavender and rose gardens in which grape vines are set impart a special floral character to these wines. Guests to Yvonne and Jacques’ vineyard accommodation in the romantic colonial villa often enjoy tasting a glass of wine under a rose covered pergola in the garden, or in the Italian-styled courtyard by the pool. The wine-making process can also be observed in the small winery and cellar set in the vineyard. At harvest time our grapes are handpicked and whole-bunch pressed. The juice is initially fermented on wild yeast and matured on Mont Pellier yeast with frequent stirring after which it continues to mature on American oak.
Our Chardonnay wine has fresh nectarine and peachy flavours which display oak and creamy yeast characteristics. It is very enjoyable with sushi dishes but when chilled, is also an excellent accompaniment to almond bread and butter pudding with biscotti.
The Pinotage wine has a fresh grapey and slightly sweet flavour with plummy and raspberry overtones and can be enjoyed at room temperature but will also be appreciated as an aperitif at four degrees Celsius.
The Villa Noortheim Rose Methode Champenoise is a bottle-fermented blend of Pinotage and Chardonnay, which is deliciously fruity and sweet with strawberry aromas. After six months of primary fermentation it received a secondary fermentation for a subsequent six months in the bottle before the yeast was removed. The yeast was removed by the “riddling” process in which the bottle was turned gradually over many weeks, while upside down, so that the yeast settled on the cork after which it was removed.
Beautiful roses and grapevines meticulously designed together have resulted in an elegant and romantic atmosphere at our vineyard near Auckland. The garden walk leads through a tuillerrie of roses including the dark red Etoile de Hollande, set against a backdrop of grapevines. An Italian-style fountain is a feature of this spot.
One path in the Villa Noortheim garden leads on past a low conifer-covered hill flanked by yellow Robinia trees. Here guests will catch sight of the old coach house which has also been restored. It was previously situated in Parnell, a suburb of Auckland, and originally used to house the coach and the horse of the Bishop at Trinity Cathedral before the turn of the 20th century.
Cellar and Winery – At the entry to the wine tasting room and the cellar, guests are greeted by the God of wine, Bacchus. The fountain is symbolic of the constant flow of sap through the roots and the grapevines, and eventually then grapes. The process continues even after picking and during fermentation. The flow of life carries on some time after bottling as the grape juice matures until the wine is finally tasted.
