My husband and I will be travelling by bus/rail throughout NZDoes the Interislander ferry from Wellington stop at Picton? From there are we able to find bus/rail transportation close by to further our travels toward Christchurch?

Yes the ferry stops in Picton. The train from Picton to Christchurch was damaged in the Kaikoura earthquake, and it is not known when it will be operating again. http://www.kiwirailscenic.co.nz/coastal-pacific/.
