two weeks trip in south island in December

Hi! My partner and I are going to spend two weeks in the south island from the 16th to the 31st of December 2017. We would like to know two things:-What would it be the best itinerary to see the most important sights?-Is it better to book the hotels in advance or to do it once we get there? Yes I strongly suggest you book in advance during that period. We don't have itinerary plans, as everyone is different.
