12 days holiday South Island

Hi we are travelling to Sth Island for 12 days from 7 May to Christchurch, and leaving from Christchurch 20 May. We are planning on seeing the usual touristy things including Franz Joseph a must, also Doubtful Sound, Wanaka etc. Was wondering what would be a good itinerary? We are a couple healthy fit seniors mid 60s on a budget. We have organised car hire. Happy to be flexible, any advise would be greatly appreciated. Thanks Pam and Paul
